Barnes and Noble's cafe has a great Cranberry Apple Turkey sandwich but this one is even better! So use up those Christmas leftovers!!
2 slices of your favorite bread
2-3 slices of turkey
2 T. cranberry sauce
2 T. cream cheese
Mayo
Lettuce
Butter
Soften cream cheese in the microwave until its warm and easy to spread. Assemble all items in a sandwich except for butter. Spread butter on outside of sandwich and grill.

{ Brown Sugar Carrots }
about 2 cups baby carrots
2 tbsp butter
2 tbsp honey
1 tbsp brown sugar
1 tsp lemon juice
1/4 tsp nutmeg
pinch of salt
In a medium saucepan, bring enough water to cover the carrots to a boil. Add the carrots and cook until just tender, about 5 minutes or so. Drain, toss back into the pan and add the remaining ingredients. Cook until a glaze coats the carrots, about 10 minutes. Serve and enjoy!

{ Funeral Potatos }
2 bags frozen shredded potatos ( sometimes I use frozen cubed potatos also)
1 cup sour cream
1 can cream of chicken soup
1/3 cup scallions sliced
1 cup cheese grated
¼ cup melted butter (optional)
Mix all ingredients together in a 9x13 casserole dish. Add smashed corn flakes on top.Bake 30 minutes at 350.
